- 1 Pork Tenderloin
- 1/2 cup sesame stir fry sauce (I used P.F. Changs) buy it here
- 1/2 cup Thai peanut sauce ( I used Sky Valley) https://amzn.to/3WDWQph
- 1 bunch green onions. Sliced thin, white and green parts divided
- 2 tsp fresh ginger. Peeled and minced
- 4 cloves garlic. Minced
- 1 jalapeno. De-seeded and minced
- 1 cup panko crumbs
- 4 tbsp sesame oil, divided https://amzn.to/3SsBHMi
- 1/4 cup water
- 8 oz spaghetti
- 1-2 limes, cut into wedges
- Cilantro, chopped for garnish
- Sweet and spicy peanuts for garnish https://amzn.to/4dicHiB
Cook your pork tenderloin to your liking. Cut into strips or bite size pieces.
You may substitute shrimp or chicken
Get your pasta boiling according to package directions.
Add 2 Tbsp of the sesame oil to a deep sided skillet. Let it warm slightly over low heat
Add your white parts of the green onion, the minced garlic, the minced ginger and the minced jalapeno to the oil. You do not want to fry this, you simply want to toss it in the oil until it is warm 3-5 minutes
Add your sesame sauce and Thai peanut sauce to the skillet, make sure your heat is on low, add the 1/4 cup of water and 1/2 tbsp of sesame oil and whisk this all together. Let this simmer for about 10 minutes.
In a small skillet, add the rest of your sesame oil and your panko and toast the panko until it is golden brown. The panko will brown quickly. When it is browned, remove it from heat.
Add your pork to the skillet sauce and toss to coat.
When your pasta is done, drain and add the pasta to the pan . Toss to coat and let it sit on low heat while tossing until it is well coated with sauce.
Plate the pasta and pork , top with the green onions, cilantro and a tablespoon or more of the crunchy panko. Add the peanuts if you're using to the top of the pasta. Squeeze lime over the top.
Serve and Enjoy!
