The Best Pad Thai
Ingredients:
- 8 to 10 oz flat rice noodles/ pad Thai noodles
- 3 Tbsp seasoned wok oil, divided, get it here
- 3 large cloves garlic, minced
- 1 to 1.25 lbs chicken breast, baked and cut into chunks or shrimp washed and peeled
- 2 eggs, whisked
- 2 cups fresh bean sprouts, about 1 package
- 1 red bell pepper thinly sliced
- 1 bunch green onions, sliced, separate whites from greens
- dry roasted peanuts
- 2 limes cut into wedges
- fresh roughly chopped cilantro
- 1/8th tsp Chinese 5 spice powder
- 3 Tbsp fish sauce
- 1 Tbsp oyster sauce
- 1 tbsp soy sauce
- 5 Tbsp light brown sugar
- 2 tsp sriracha
- 2 Tbsp rice vinegar
- 1 Tbsp sesame oil
- 3 Tbsp creamy peanut butter
- sushi ginger for serving optional
Instructions:
Make Pad Thai sauce:
3 Tbsp fish sauce
1 tbsp oyster sauce
1 tbsp soy sauce
5 tbsp light brown sugar
2 tsp sriracha hot sauce, more if you want things spicier
2 tbsp rice vinegar
1 tbsp sesame oil
3 tbsp creamy peanut butter
1/8 tsp Chinese 5 spice powder
Warm for 30 seconds in the microwave to soften peanut butter, whisk together and set aside
Double the sauce if you like things saucier. We personally like to double the sauce.
If using chicken, season with salt and pepper, bake until done. Cut into bite size pieces and set aside.
Cook noodles according to package instructions, just until tender. Rinse under cold water.
Wash and prep the cilantro, limes, red pepper, garlic and green onions. Rinse bean sprouts under cold water.
Heat 2 tablespoons of the seasoned wok oil in a large saucepan or wok over medium heat.
Add the white parts of the green onion, garlic and bell pepper. Saute until fragrant about 2 minutes. If using shrimp add shrimp now. The shrimp will cook quickly, about 2 minutes on each side, or until pink.
Push everything to one side of the pan. Add a little more wok oil and add the beaten eggs to other side of the pan. Scramble the eggs, breaking them into small pieces with a spatula as they cook.
Add noodles, chicken if using, sauce, bean sprouts and peanuts to the pan (reserving some peanuts for topping at the end). Toss everything to combine. Simmer to warm everything through.
Top with green onions, extra peanuts, cilantro and squeeze of lime. Serve with sushi ginger
