Perfectly Comforting Dumpling Soup
My Hubby describes this soup as "Goldilocks Just Right" soup.
Ingredients:
- 44 oz of chicken broth or chicken stock. I used my homemade Chicken stock, view the recipe here.
- 1 package of Asian dumplings ( about 10)
- 1/2 tsp white pepper, get it here
- 1 tsp jarred minced garlic, get it here
- 2 tbsp Litehouse freeze dried ginger, get it here or here
- 1 bunch of green onions sliced, separate whites and greens
- 2 tbsp toasted sesame oil
- 1-2 tsp soy sauce, start with 1 tsp and add more after tasting if desired
- Cilantro chopped for serving
- Habanero infused olive oil for serving ( or any other spicy chili infused oil) optional, get it here
Add the sesame oil, garlic, ginger, white parts of the green onions to a large skillet with sides or a large soup pot. Saute these ingredients over medium heat for 1-2 minutes until fragrant.
Pour the chicken stock into the skillet, add the dumplings, white pepper and soy sauce. taste and add more soy sauce and pepper if desired.
Heat all ingredients over medium low heat for about 5 minutes.
Ladle soup into bowls and garnish with a drizzle of the habanero infused olive oil, top with cilantro and green parts of green onions.
If you don't want to use dumplings you can alternatively substitute the chicken broth and the dumplings with 2 packs of Mrs Grass soup prepared in 6 cups of water. Follow package instructions.
