Chicken Pot Pie Soup with Pie Crust Crumbles
Ingredients:
8 tbsp butter
2 medium yellow onions diced (about 3 cups give or take)
3 cups celery stalks cleaned and diced
3 cups carrots diced
6 cloves or garlic minced
1- 12 oz bag frozen peas
1- 12 oz bag frozen corn
2- 3 cooked chicken breast shredded or shredded chicken from a rotisserie chicken, use more if desired
2 cups heavy cream
1 russet potato peeled and diced, or, about 6 small yellow cooking potatoes diced
4 cups chicken stock
1/2 cup flour
1-2 tsp Penzey's North Woods seasoning to taste or Ozark seasoning ( optional but recommended)
1/4-1/2 tsp Penzey's French 4 spice to taste (optional but recommended)
1 tsp salt & 1 tsp coarse ground black pepper, initially (you will taste and add more to taste at the end)
2 Pappy's brand Pie crusts baked
Additional butter and salt to add to pie crust crumbles
Remove meat from rotisserie chicken, shred and set aside in refrigerator

Season chicken breast with Salt and pepper Bake and shred your chicken breast.
Make the pie crusts. Thaw 2 Pappy's pie crusts . Flatten with hands until they are about ¼ inch thick and bake for 15 minutes or so at 425. Drizzle with a little melted butter and add sea salt.
Wash prep and peel all veggies.
Begin by melting the butter in a large 7.5 or 8 quart soup pot or dutch oven. Add in diced onions, garlic, and celery. Sweat for 5 minutes, until onions are translucent. Add in flour and stir for 1-2 minutes.
Add shredded chicken breast, frozen peas, carrots, frozen corn, potatoes, salt, and pepper and other spices that you are using. Stir.
Slowly add chicken stock, stirring constantly. Simmer on medium-low heat for 20 minutes or until the potatoes are cooked through.
Lastly add heavy cream and stir well to incorporate.
Taste and add additional salt pepper and other seasonings to taste.
I added Penzy's brand Northwoods seasoning ( blend of salt, pepper, paprika, thyme, rosemary, garlic and chipotle) along with a little bit of the Penzey's French Four Spice and a few shakes of the Ozark seasoning. Smoked paprika would also be good.
Top with crumbled pie crust and enjoy.
