Roasted Toasty Peanut Butter Jellytime Wings
Toasted Thai Peanut Sauce with Spicy Blackberry Jam
Ingredients:
- 2 lbs chicken wingettes and drummettes
- 2 Tbsp baking powder
- 2 tsp kosher salt
- 2 tsp coarse ground black pepper
- Cooking spray
- Toasted sesame oil for brushing on chicken
- 3 heaping Tbsp natural peanut butter, I used JIF natural
- 2 Tbsp rice vinegar
- 1 1/2 Tbsp soy sauce
- 2 tsp sriracha, more if you want spicier
- 2 tsp hot honey (or regular)
- 1 Tbsp toasted sesame oil
- 1 Tbsp brown sugar
- 1/2 tsp ground ginger
- 4 Tbsp blackberry jam
- 1 additional tsp sriracha sauce
- Fresh blackberries (for serving)
- 1 bunch green onions sliced (for serving)
- Toasted sesame seeds (for serving)
Instructions:
Preheat oven to 425 F
Line a baking sheet with foil, place wire racks on top and spray with cooking spray.
Pat dry the chicken drummettes and wingettes. Place in a large bowl.
Whisk together the kosher salt, pepper and baking powder, sprinkle over the chicken and toss in a bowl to coat.
Place chicken on the wire racks. Brush top of wings lightly with some toasted sesame oil. Bake for 25 minutes. After 25 minutes, flip the wings over and brush again lightly with sesame oil. Bake for an additional 20 minutes.
While wings are baking, whisk together the peanut butter, rice vinegar, soy sauce, sriracha, hot honey, toasted sesame oil, brown sugar and ground ginger. Microwave for about 20 seconds to warm and make whisking easier. Once ingredients are well combined set aside.
In a separate bowl whisk together the blackberry jam and the 1 tsp sriracha, set aside.
Slice the green onions, wash and sugar the blackberries if desired.
When wings are done baking, allow to rest for a few minutes. Transfer wings to a large bowl that has a lid. Add the peanut butter sauce, place the on the bowl lid and shake vigorously to coat the wings in the sauce.
Transfer the sauced wings to a serving platter. Add dollops of the blackberry jam mixture. Top with the sliced green onions, toasted sesame seeds and serve with the blackberries.
