Chipotle Fettuccine Alfredo with Spicy Salmon
You May Sub Chicken for Salmon if desired.
Ingredients
- 14 oz jar of high-quality Alfredo pasta sauce
- 3-4 chipotle peppers in Adobo sauce, de-seeded
- 8 oz fettuccine pasta noodles, prepared
- 1 red bell pepper sliced
- 1/2 of a yellow onion, sliced
- 1 bunch of asparagus, trimmed
- 1 1/2 lbs salmon filets, Skin off and cut into bite-size chunks, approximately 1.5" x 1.5"
- 1 Tbsp quality EVOO
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1/2 tsp chili powder or chipotle powder
- 1/8 tsp cayenne pepper, use 1/4 tsp if you like it spicier
- 1/2 tsp fine ground white pepper divided, get it here
- 1/2 tsp table salt
- 1/2 tsp coarse ground black pepper
- Garlic bread for serving
- Freshly shredded Parmesan cheese for serving
Instructions:
Wash and prepare veggies. Slice the onion and pepper, trim the asparagus.
Cut open and de-seed 3-4 chipotle peppers. The more you use the spicier the sauce will be.
In a blender combine the jar of Alfredo sauce with the chipotle peppers and 1 tsp of the chipotle sauce from the can. Blend well.
Pat salmon dry. Remove skin from the salmon filets if the skin is still attached. Cut the salmon into bite-size pieces. Approximately 1.5” x 1.5”
In a large bowl whisk together olive oil, garlic powder, onion powder, smoked paprika, chili powder or chipotle powder, cayenne, white pepper, salt, and black pepper.
Add salmon pieces to bowl with the spice mixture and toss to coat.
Prepare a baking sheet with parchment paper. arrange salmon on baking sheet and bake for approx. 15 minutes ( give or take) or until done.
Or
Place parchment paper liner in basket of air fryer if using, arrange salmon in a single layer in basket. Air fry for 10 minutes at 400 shaking and/or turning salmon half way through. Work in batches until salmon is done.
While the salmon is cooking, bring a large pot of salted water to a boil and prepare the fettuccine noodles. Drain and set aside when they are done.
In a large skillet heat 1-2 Tbsp of olive oil over medium heat. Fry the sliced onion and red pepper with a dash of salt and pepper. After about 2 minutes add the trimmed asparagus. Fry all the veggies until they are al dente.
Reduce pan heat to low. Add in your cooked fettuccine noodles and the chipotle Alfredo sauce. Stir and toss noodles and veggies with the sauce until everything is coated and well combined.
Plate the pasta and top with your Salmon bites and Parmesan cheese. Serve with warm garlic bread.
